Upside Down Pudding

Ingredients

  • 1 small can of either pineapple rings or pears or apricot halves
  • 2 table spoons of golden syrup or honey
  • 100g self raising flour
  • 100g soft margarine
  • 100g caster sugar
  • 2 eggs

Equipment

  • large mixing bowl
  • measuring jug
  • wooden spoon
  • tablespoon
  • palette knife
  • a 2 pint ovenproof  (non metal) dish

Method

  1. Preheat oven gas mark 5 /190c
  2. Cover bottom of the dish with the honey or syrup
  3. Drain tin of fruit and arrange pattern on top of the honey or syrup
  4. Place margarine,sugar and self raising flour into the mixing bowl
  5. Break eggs into the bowl and mix together
  6. Carefully spread the mixture evenly over the fruit
  7. Microwave for 5 min and then bake for 10 – 15 mins in the oven until firm and golden.
