Fruity Cake Slice
Ingredients
- 175g Margarine or Butter
- 100g Soft brown or white sugar
- 175g Wholemeal or white self-raising flour
- 2 eggs
- 50g Sultanas or dried fruit
- 25g Glace´ cherries (halved)
- 1 teaspoon of mixed spice
Equipment
- Large saucepan
- Small bowl
- Palette knife
- Fork
- Wooden Spoon
- Lined baking tray
Method
- Preheat oven to gas 5/190° C.
- Melt margarine and sugar gently in a saucepan.
- Remove from heat, leave to cool.
- Crack eggs into a small bowl and beat.
- Add flour, spice, fruit and eggs to margarine and sugar, mix in well.
- Pour into a greased and lined tin or baking tray.
- Use a palette knife to spread the mixture evenly.
- Bake for 15 minutes until firm to touch and golden brown.
- Cut into squares or slices.
