Fruity Cake Slice

Ingredients

  • 175g Margarine or Butter
  • 100g Soft brown or white sugar
  • 175g Wholemeal or white self-raising flour
  • 2 eggs
  • 50g Sultanas or dried fruit
  • 25g Glace´ cherries (halved)
  • 1 teaspoon of mixed spice

Equipment

  • Large saucepan
  • Small bowl
  • Palette knife
  • Fork
  • Wooden Spoon
  • Lined baking tray

Method

  1. Preheat oven to gas 5/190° C.
  2. Melt margarine and sugar gently in a saucepan.
  3. Remove from heat, leave to cool.
  4. Crack eggs into a small bowl and beat.
  5. Add flour, spice, fruit and eggs to margarine and sugar, mix in well.
  6. Pour into a greased and lined tin or baking tray.
  7. Use a palette knife to spread the mixture evenly.
  8. Bake for 15 minutes until firm to touch and golden brown.
  9. Cut into squares or slices.
